A delicious, contemporary twist on the traditional casserole theme.
Prepare, using 1/2 cup flour per recipe:
Creamed Chicken or Turkey
Stir in:
1 to 2 4 1/2-ounce cans chopped mild or hot green chili peppers, drained
1/4 teaspoon ground cumin
Position a rack in the center of the oven. Preheat the oven to 400┬░F. Butter a 13 x 9-inch baking pan or other shallow baking dish.
In the prepared pan, layer the creamed chicken alternately with:
4 ounces tortilla chips, lightly crushed (4 ounces yields 2 to 3 cups)
2 cups lightly packed grated Cheddar cheese (4 ounces per cup)
Top with a final layer of tortilla chips sprinkled with cheese. Bake until the sauce is bubbly and the cheese is golden brown, 25 to 35 minutes.
